UK Research: Frozen Veggies Have More Nutrient Value Than Fresh
According to British researchers, frozen veggies can have more nutrient value than fresh veggies if they are frozen shortly after being picked.
Scientists at the Institute of Food Research discovered that around 45% of vital nutrients get lost during the time it takes fresh veggies to reach a user's dining table.
The produce study was conducted for the frozen-food maker Birds Eye, the institute stated.
Dr. Sarah Schenker, a nutritionist said, "The nutritional content of fresh vegetables begins to deteriorate from the minute they are picked."
Institute scientists discovered that after 16 days fresh beans lost 45% of their nutrient value and broccoli and cauliflower lost 25%.
Carrots lost just 10% and peas lost 15%.
A review by the institute discovered that the majority of UK shoppers believe that fresh veggies are less than four days old. (With Input from Agencies)
