Calorie-free water, air or gel to replaces fat in chocolate barNew generation of low-fat foods includes a chocolate bar that is nearly two-thirds water yet tastes the same as regular chocolate, says the British scientists.

The Daily Telegraph reported on Saturday that researchers at the University of Birmingham have discovered ways to replace fat particles with calorie-free water, air or gel.

Lead researcher Philip Cox said that the chocolate bar, which connects water particles to cocoa butter crystals, contains about 60 percent water yet has the taste, smell and texture of regular chocolate.

Cox and his team also are working on a new "super porridge" that would help dieters feel full because it remains in the stomach for up to six hours when liquid changes into a gel after coming into contact with stomach acid.

Cox further said," We are well advanced with the work and are already talking to manufacturers about creating products based on our research." (With Input from Agencies)
