Neeta Handa loves experimenting with various ingredients to make some delicacies which are nutritious and tasty. Cooking is her passion and everyone who knows her, would praise about her culinary skills. Today she shares a couple of quick nourishing recipes with the readers of DNA Navi Mumbai.

Spaghetti in a jiffy

Ingredients:

Spaghetti - 1 pack

Garlic coarsely (chopped) - 2 tbsp

Chilli flakes - 1½ tbsp

Salt - to taste

Olive oil

Water - 2 litre

Method: Add salt and 2 tbsp olive oil to water. Add spaghetti when water boils. Do not over-cook spaghetti. Drain water through a sieve and apply one tsp of olive oil. Now take some olive oil in a kadhai and fry garlic till deep brown. Add chilli flakes and salt. Toss the spaghetti for about a minute and your dish is ready.

Nutri-Salad:

Ingredients (vegetables):

Two cups of following mixed vegetables

Shredded cabbage

Grated carrot

Finely chopped capsicum

American corn

Macaroni (boiled)

Finely chopped cucumber

For Dressing:

Hung curd - 1 cup

Tomato ketchup -2 tbsp

Chilli sauce - 2 tbsp

Onion finely chopped - 1 tbsp

Capsicum finely chopped

Method: Whip the curd in a bowl. Add tomato ketchup, chilli sauce, onion and capsicum and mix well. Keep it in a refrigerator. Keep all the ingredients (vegetables) in freezer to chill so that they become crispy, for about 15 minutes before serving.
